how easy is it to change the clutch on me 2.0 16v gsi redtop?

depends as some have a flap you can undo and the clutch slids out or it could be the model where you have to take the box off. cant remember which one you will have but someone will say soon
with engne out its well easy as did my LET before it went in, just popped gearbox off, and put new clutch in, took me about an hour to do. with the engine in the car it may prove abit more difficult as access is restricted but it can be done. . . . its just as easy just more time consuming as your in a tight space. the gearbox as kev said should have a oblong shaped panel you can unbolt off and slide clutch out and put new one in but depending on what model you have.
